5 Ingredient Chocolate Nut Butter Cookies

Looking for the perfect cookie recipe that will knock your socks off but also be healthy AND easy? These cookies are so dang good and guilt free! Using no sugar, no grains, and no dairy! We'll definitely be having these more often! I loved that it took me only 5 minutes to throw together and were really quick to clean up as well.
5 Ingredient Chocolate Nut Butter Cookies

1 cup almond butter or organic peanut butter
8 oz (about 1 cup packed) pitted medjool dates
1/2 tsp sea salt
1 egg
1 tsp vanilla
4 oz melted dairy free semi-sweet chocolate (we use Enjoy Life brand)
Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper.
In a food processor, combine the nut butter, dates, salt, and vanilla. Pulse until well combined and no large chunks of dates remain. Add the egg and pulse to combine. Using a small cookie scoop or spoon, scoop the dough into 14-15 balls and place on the baking sheet. Gently press down with your fingers to flatten, careful not to press too hard so the cookies don't break.
Place in the oven and bake for 9-10 minutes. Do NOT overcook!
Remove the cookies from the oven and let cool before drizzling the melted chocolate over top. Allow the chocolate to cool for about 20 minutes before eating.
I love using dates to replace cane sugar or brown sugar in baked goods recipes. Dates still contain sugar, however they are also full of vitamins, minerals and fiber. For a fruit, dates are high in protein, potassium, copper, manganese and magnesium to name a few. Because dates contain high level of fiber and potassium they have been known to help relieve constipation and promote better bowel movements.
Although dates are still high in natural fibers, you can see why making this swap is worth it when baking up sweet treats. You may as well use a sugar that will not only satisfy your sweet tooth, but will also include natural healing properties.
As the holiday's approach, keep this in mind as your homes may be bombarded with sugary sweet treats. Incorporating ingredients, like dates, into your recipes can make a big difference in your health and healing journey.
