Chewy Power Bites

With school back in session, I thought I would share one of our favorite, nutritious, after school snacks with you! These Chewy Power Bites are packed full of nutrition and will help keep you (and your kids) satisfied until dinner time! They're perfect to add to lunches, or even on-the-go snacks as well! Just try not to eat the whole batch in one sitting! 😘



Chewy Power Bites Recipe:


1 1/2 cups gluten free oats

1/2 cup popped quinoa (**recipe below**)

2 Tablespoons chia seeds

2 Tablespoons flax seeds

2 Tablespoons pumpkin seeds

6 dates (pitted), you can use 1/3 cup raisins or cranberries instead

1/3 cup sliced/chopped almonds

1/2 tsp salt

2 Tablespoons oil (coconut, avocado, or olive oil)

1/4 cup raw honey

1/2 cup nut butter

1 tsp vanilla

1 tsp cinnamon

1/4 cup mini semi-sweet chocolate chips



In a food processor, blend together all ingredients, leaving out the chocolate chips. Once well blended, gently fold in the chocolate chips.


Line an 8x8 pan with parchment paper. Test out the stickiness of your power bites before forming in the pan by rolling a 1x1" ball together in your hands. If it sticks well together than move forward with forming your bites. If your bites are still crumbly you can add another 1/4 cup of nut butter or try adding 2 Tablespoons of water.


Once your bites are at a good consistency and sticking together you can either form them into 1x1" bite size balls or firmly press down mixture into an 8x8 pan. Place Power Bites in your freezer for 30 minutes. Once cooled, if making them in the pan, pull them out and cut into bite size pieces and enjoy!


Store these in the fridge or freezer to keep their shape! The bites will last up to 2 weeks in the fridge or 2 months in the freezer!

Popped Quinoa Recipe:


1 cup quinoa


Heat a wide sauté pan over medium high heat until extremely hot. Test the temperature by adding a drop of water. It should sizzle immediately.


Pour quinoa, making sure it stays in a single layer. Shaking the pot regularly, let the quinoa pop for 1-2 minutes. You know it is done when it smells slightly nutty and the popping has slowed down (similar to popcorn).


Transfer to a bowl. Add seasoning if desired.


Popped quinoa is great to add to salads, parfaits, or just to snack on!
