Cilantro Lime Rice

If you've been following along for a little while then you might know by now that I am a sucker for Mexican dishes! I used to be a huge fan of Mexican Rice (you know, the yummy orangish/red rice??) until I learned how to make this delicious Cilantro Lime Rice! It's been a GAME CHANGER!




Serve this on the side as a side dish or add it to salads, tacos, burritos, you name it!


Here's my recipe!


Cilantro Lime Rice

2 Tbls organic grass fed butter (or olive oil for DF)

1 1/2 cup basmati rice

1-2 cloves garlic, minced

1/2 yellow onion diced

1 tsp sea salt (you know I choose Redmonds)

1 tsp cumin

3 Tbls freshly squeezed lime juice (1 whole lime)

2/14 cup bone broth

1 cup cilantro minced


8 hours before making this dish, soak your rice in 3x's the amount of purified water as rice. When it's time to cook your rice, strain water through a mesh strainer and rinse with purified water until water runs clear.


In a medium/large pot turn heat on medium. Melt butter. Add rice, garlic, onion, salt, and cumin. Stir until fragrant and onion is translucent (about 3 minutes). Add in lime juice, bone broth, and cilantro. Cover and bring rice to a boil. Once boiling, reduce heat. Keep rice covered and simmer for 15-17 minutes. Turn off heat and allow rice to rest for 5 minutes before "fluffing" with a fork. Serve with your favorite Mexican dishes!


Let's Learn

This recipe is quite versatile. If you're dairy free, then just swap out the butter for extra virgin olive oil or avocado oil...such an easy swap! But let's talk about why this recipe calls for basmati rice.


Most rice is grown in areas where there are high arsenic levels in the soil. That being said, rice typically has high traces of arsenic in it, which can ultimately effect the health of our gut, brain, and other organs in our bodies. Basmati rice is know for carrying the least amount of arsenic in it. Although it still contains some traces, it just doesn't have as much. This is why I start the recipe off with soaking your rice. Soaking your rice helps pull that arsenic out of the rice and into the water...much better for our bodies this way!


If you don't have basmati rice, don't sweat it. Simply use what you've got and still soak your rice. This will do the same thing, you'll just be working on getting more arsenic out of your rice.


Remember that using purified water is also important because our tap water can also contain these high levels of toxins in them, which essentially means we'd be adding them right back into our food. YIKES! The one my family uses is from Clearly Filtered. I'll link it below.



Are there better brands of rice to buy than others? Yes! Lundberg rice is a great brand to buy as they test for heavy metals and toxin exposures and does not use any pesticides on their crops! You can find Lundberg rice at almost any of your local grocery stores!
