Corn and Bean Salsa AKA "Cowboy Caviar"

With summer upon us, we know that there will be multiple friend and family gatherings and BBQ's. THIS is one of my favorite recipes to whip together for these events. It's quick, easy, and nutritious! The perfect party appetizer or side dish!


Corn and Bean Salsa


5-6 Roma tomatoes (or 28 oz crushed tomatoes, drained)

1/2 red onion

1 cup cilantro

3 garlic cloves

1-2 jalapenos

2 cups organic corn

1 can organic black beans

2 avocados, sliced into small cubes

1 1/2 tsp salt

1 fresh squeezed lime

2 Tbls organic apple cider vinegar

2 Tbls extra virgin olive oil


Directions

In a food processor add in tomatoes, onion, cilantro, garlic, and jalapenos. Blend until all ingredients are diced. In a medium sized mixing bowl, add corn, beans, avocados, blended veggies, salt, lime, vinegar, olive oil. Mix well together. Serve with chips, use to garnish a salad, with quesadillas, on top of tacos, or with a spoon! :)


Here's what I did to make this recipe better...Most corn and bean salsa's use a simple Italian dressing as their liquid. Dressings like this use sugar, inflammatory oils (soybean, canola, vegetable), natural flavors, gums, and additives that don't serve our bodies in any way, shape, or form.


Limes are a great source of vitamin C! When freshly squeezed you also get the benefit of their natural fibers, making it less insulin spiking and better for your gut.


Organic apple cider vinegar is great for keeping blood sugar levels low, increasing good bacteria of the gut, and boosting the immune system!


Extra virgin olive oil is one of the 3 fruit fats that are essential for good health. Extra virgin olive oil has MANY health benefits, which range from healing the skin, to reducing inflammation in the brain, heart, and gut. Inflammatory oils, such as soybean, canola, or vegetable oils do the exact opposite (a common contributor to increased anxiety and depression).


As I'm sure you know the recipe with Italian dressing is delicious, but now that you know my secret to making it healthier, give it a try! And don't tell me this recipe isn't to die for!

15+ yrs later and my moms still making this recipe you taught us….guess I should update her on the healthy version:)

It’s seriously so good! And this version we typically have all of these ingredients on hand! I never had Italian dressing on hand unless it was bought specifically for this. ☺️
