Creamy Cauliflower Alfredo

Who doesn't love a creamy cheesy alfredo sauce? Honestly, it's been a while since we've had alfredo in our home. I used to almost always buy alfredo sauce because I always thought it was too complicated to make. However, recently I've had an itch for alfredo but haven't been able to actually find a sauce that doesn't include inflammatory oils or artificial ingredients. (So frustrating!)

Anyone who knows me and my method to cooking, I try really hard to include as many vegetables in our meals as possible. That being said, I knew I had to add cauliflower to the sauce and see if any of my kids or husband would notice. Guess what?! They didn't! This recipe calls for a whole head of cauliflower and I was able to hide it so well that no one noticed! That's a win for all of us who have picky eaters or small children!


So here's what I did:


Creamy Cauliflower Alfredo

2-3 Tbls olive oil

1 head cauliflower, finely minced (I threw mine in a chopper for a few pulses)

3 cloves of garlic, minced

1/2 yellow onion, minced

1 tsp Redmond's Salt

1 cup bone broth

4 cups raw, organic heavy cream

1 1/2 cups freshly grated parmesan cheese

1 Tbls parsley

1/2 tsp red pepper flakes

2 chicken breast (grilled and cubed)


Directions

In a medium size pot add olive oil, cauliflower, garlic, and onion. Sauté on medium heat until onion and cauliflower is translucent and garlic is fragrant. Add in salt, bone broth and heavy cream. Bring pot to a simmer and stir frequently for 10 minutes. Then, with an immersion blender or blender, blend sauce until creamy. Add in parmesan cheese and stir until completely melted. Finish sauce off by adding parsley, red pepper flakes, and chicken. Serve over your favorite pasta or, my favorite, spaghetti squash!


Cauliflower

Let's take a minute to learn about cauliflower and why I love it so much! Cauliflower is another nature superfood! Cauliflower is another food that is high in antioxidants...which means it helps our bodies detox free radicals, that's essentially a form of stress or toxin that we don't want too much of (if we do, we will start to experience all sorts of health problems). It is also very high in Vitamin C, which we all know is a big deal in helping our immune system function properly.


Cauliflower is also low in carbohydrates, which is very helpful to know when trying to lower your blood sugar levels and reduce the effects of a blood sugar spike! Not only that, but there are approximately 25 calories per cup of cauliflower! This is why so many people have jumped on the cauliflower rice bandwagon! It's the perfect swap with rice and pasta!


With 2.5 grams of fiber per cup of raw cauliflower, cauliflower is another great additive to your diet that will aide in better digestion and gut health!
