Creamy Chicken Pot Pie Soup

Creamy Chicken Pot Pie Soup is the perfect soup to serve to your family this fall and winter season. It's full of nutritious vegetables, healing herbs, and plenty of protein. This soup is guaranteed to keep you full for hours!

I love your traditional Chicken Pot Pie recipe, but as most of you know, I love bulk prepping my meals so we have plenty of leftovers for the next day and hopefully another meal during that week. What I don't love about traditional Chicken Pot Pie is that the crust will get soggy when eaten as leftovers. So my resolution is this soup! We love to make our favorite biscuits or muffins to go with it and we don't even miss the crust!


Here's my recipe!


Creamy Chicken Pot Pie Soup

3 Tbls grass fed butter

1 yellow onion, minced

3 cloves garlic, minced

4 large carrots, minced,

3 celery stalks, diced

1 Tbls dried thyme leaves

1 Tbls dried rosemary leaves

2 cups organic sweet peas

2 cups organic sweet corn

3 chicken breasts, cooked and shredded

1 Tbls sea salt (I like Redmond's salt)

8 cups purified water or bone broth

4 cups organic whole fat milk or 2 cups heavy whipping cream


In a large stock pot melt the butter. Add in your onion, garlic, carrots, and celery. Sauté on high for 2-3 minutes until translucent and fragrant. Add your thyme and rosemary and sauté with veggies for another 1-2 minute's to release flavor. Stir in all remaining ingredients aside from the milk. Bring pot to a boil then turn heat down to low and allow to simmer and cook for 20 minutes. (If using frozen chicken breast, cook your chicken in the water until cooked through, about 20 minutes. Remove from the pot to shred before placing back in.) Turn heat off and stir in your milk or cream. Serve with your favorite biscuits or muffins!


One thing I think get's looked past a lot when cooking is the power behind seasonings...AKA HERBS!!! I love cooking with herbs! Not only do they give our dishes more flavor, but herbs have incredible healing powers!


Thyme is an herb that most of us have in our spice cabinet, but we probably are unaware of what the power behind this herb actually is! Thyme has been used for centuries and was even used long before medicine as an antimicrobial, antifungal, and anti-inflammatory herb. This herb can be used to help combat sore throats, relieve intestinal discomfort, reduce arthritic pain, kill off parasites, and more! Bringing this herb to your dishes frequently will most certainly help your body heal and feel it's best!


I believe some of us have forgotten that before Western Medicine, herbs were all we had to help our bodies combat illness and discomfort. One reason I love cooking my own meals is that I can add these powerful, healing herbs to our dishes, daily, to help our bodies feel their best and can even cater to what viruses might be passing through our bodies during different times of the year.


The power behind what we eat can be truly incredible!
