Egg Roll Bowls

Looking for a quick and easy, weeknight dinner full of fresh veggies, simple ingredients, and flavor? This is a fun one and a crowd/family pleaser. You can use the vegetables listed in my recipe or play around with others you may have that need to be used up in your fridge. This is such a simple recipe and can easily be made grain free as well!


Egg Roll Bowls

Serves 6

3 cups cooked rice or cauliflower rice

1 lb organic breakfast sausage (I like Applegate or Amylu)

2 Tbls olive oil

1 1/2 cups chopped carrots

3 cups chopped red cabbage, tri blend coleslaw mix, or broccoli slaw

1 small zucchini, diced

1 1/2 Tbls ginger (or 3 Tbls fresh ginger)

1/4 cup organic raw honey


In a large skillet, brown sausage. Add oil, carrots and cabbage, cover and cook on low until carrots are soft. Add zucchini and ginger, bring heat back up to medium and sauté for 5 minutes. Turn off heat and season with honey. Stir well. Serve over rice or cauliflower rice.


Looking at the list of ingredients above, there's probably one that you don't think to have too frequently in your fridge, and that is red cabbage. In just 1 cup of raw cabbage, it gives you 50 ml of the immune boosting vitamin, vitamin C (that's about 85% of your body's daily value).


Red cabbage is also high in vitamin K (around 40% DV). Vitamin K is a key player when it comes to keeping high calcium levels in our bodies. But adequate amounts of vitamin K can also help reduce your risk of calcification build up in your gallbladder and kidneys! Struggling with kidney stones or gallstones? Increase your vitamin K intake, and red cabbage is a great holistic place to start.
