Gluten Free Meatloaf

Meatloaf is one of those meals that people always joke about tasting disgusting, but in reality, when you have a good recipe, meatloaf is so yummy! My family all loves this recipe and it's one of my favorites to bulk prep as well! Not to mention, leftovers are delicious, especially when heated up on a nice hot skillet to get that added "crispiness" around the edges!


Finding good recipes that are gluten free can be discouraging, and I think sometimes we over complicate them. This Gluten Free Meatloaf has just one simple swap to it to make it gluten free, and I know you won't even miss the bread, it's that good!


Here's what I did:


Gluten Free Meatloaf

2 lbs grass fed ground beef

1 egg

1 small yellow onion, minced

3 cloves garlic, minced

1 tsp paprika

1 tsp coriander

1 tsp ground mustard

1 1/2 tsp salt

pepper

1/2 cup organic steel cut oats

*optional: 1/2 cup colby jack cheese, grated


Preheat oven to 450 degrees F.

Combine all ingredients together in a large mixing bowl. Mix together.

Place meatloaf into 2 bread pans. Cover and bake for 30 minutes. Uncover and finish baking for 10 more minutes, or until the top starts to look crisp.

Serve with your favorite side of roasted veggies, mashed potatoes, or fresh garden salad.


My nutrition tip for today is this: KEEP IT SIMPLE!

Often times when I talk to clients about adding more protein, veggies, and healthy fats to their diets, they get overwhelmed by the idea that everything has to be gourmet, take a lot of time to prep, and be cooked perfectly. This is NOT the case. This recipe is a perfect example of a dinner that can be thrown together rather quickly (under 10 minutes), and is very hands off once in the oven. You can easily double or dripple the recipe for easy freezer meals that can be popped in the oven or even Instant Pot!


Simplicity is key to having success with your nutrition, and even lifestyle changes! Don't expect to stick to a program for long if it requires too much work and effort, especially because our day-to-day lives already require so much of that already. You got this!
