Gluten Free Zucchini Muffins

It's almost school time here and I'm gearing up for school lunches and after school snacks to have on hand. This recipe is one of my favorites, especially as this time of year, if you have planted zucchini in your garden, you have more than enough to last you a while. It's also an easy way to get some veggies in your kid's diet without them even knowing!


I love this recipe because it uses maple syrup and raw honey as sweeteners, giving your body some more nutrients than your original cane sugar or brown sugar muffin recipes.


Here's how I made them:


Gluten Free Zucchini Muffins

Makes 12 muffins


1 cup shredded zucchini

1/4 cup maple syrup

1/4 cup raw honey

2 eggs

1/4 cup milk or plant milk

1 Tbls vanilla extract

4 Tbls extra virgin olive oil

2 1/4 cup organic gluten free oats

1 tsp baking powder

1/2 tsp sea salt

1/2 tsp baking soda

1 tsp cinnamon

*optional add-ins

1/2 cup of: chocolate cup chocolate chips, raisins, blueberries, or walnuts


Preheat oven to 350 degrees F.


In a blender, combine all ingredients, leaving out any of the "optional" add-ins. Blend on high for about 2 minutes, or until well combined. Using a muffin tin, generously grease the tin with ghee, butter, or coconut oil. Pour the batter until each muffin is filled 3/4 of the way full.


Bake for 22 minutes, or until it passes the toothpick test (comes out clean after sticking a toothpick in the muffin).


Allow to cool for 5 minutes before removing from pan and cooling on a cooling sheet or towel.



Let's take a minute to talk about oats.

Oats are a great replacement for anyone who struggles with celiac disease or gluten sensitivities, as long as you are sure to get gluten free organic oats. Oats are naturally gluten free, however, often times they are prepared in facilities with other flours/grains, leaving you with a chance that they may contain gluten in their packaging. The label "organic" on organic oats may play an even bigger role in our health because traditional oats are sprayed with Round-up, containing the highly toxic chemical, glyphosate.


If you are not new here, you've most likely heard me talk about this chemical before. Glyphosate is really good at killing, not only weeds, and drying out crops, it's also great at staying on the crop after its been sprayed, therefore ends up on our plates and in our guts. The harm doesn't stop there. Once ingested, glyphosate is capable of killing all good and bad bacteria in our guts and wrecking havoc on our gut lining. Ultimately leading to things such as leaky gut, SIBO, IBS and more! If your gut is not working properly and has tiny tears in it from being exposed to such harmful toxins, other chemicals, toxins, and food start leaking through. From this, you may start to experience things such as anxiety, depression, acne, eczema, asthma, hormone imbalances, constipation, fatigue, and so much more! See why I prefer organic oats over conventional oats??? (I hope a lightbulb just turned on for you.)


My favorite place to get organic oats is from Khorasan Mills. You can order online and have your grains shipped or pick them up if you're local.

Recipes like this make it a lot easier to navigate healthier eating in your home, especially for kids/teenagers. It's hard to take yummy treats and snacks away and make them still feel like they are enjoying their childhood. Trust me, I've been there.
