Instant Pot Beets

I used to never, I mean NEVER, buy fresh beets because they were too big of a pain to cook. I felt like it always took an hour or longer to boil beets on the stove. To me, that just wasn't worth it. Now I'll be the first to say canned, frozen, fresh, boiled, baked, sauteed, beets are going to give you great nutrients regardless. However, I just feel like there's nothing better than fresh vegetables, including fresh beets. Anyone else agree?


Since learning how to make beets in the instant pot, we've been having fresh beets more regularly. My kids all love them and get a kick out of what color beets turn everything (fingers, clothes, and more!)! Beets are a great vegetable to add to your weekly meal planning.


Here's my super simple recipe for cooking beets in the instant pot!


Instant Pot Beets

Beets, washed and trimmed (leaving about 2" of stem at the top)

1 cup purified water


Directions:

Wash and prepare your beets. In your instant pot, place your beets on top of your instant pot safe wire rack. Pour in 1 cup of water. Secure lid and close pressure gage. Set on manual for 20 minutes. Once your beets done cooking, allow your instant pot to do a manual release for 15 minutes before releasing pressure. Remove lid and allow to cool for 10 minutes before taking out of the instant pot.


I like to leave the skins on our beets, they don't change the taste and it doesn't bother any of us. You will notice, however, that the beets skins will easily fall off at this point. Serve your beets on the side of your meal or add them to salads, rice bowls, and more!


Some fun facts about beets. You'll easily see why I like to include them in our meals weekly!


Beets are a root vegetable that are closely related to swiss chard and spinach. You can eat the leaves as well as the root! One of the most important micronutrients that beets contain is choline. Choline helps support the body with methylation, which is your bodies way of turning off an on gene expression (extremely important to obtaining good health). Beets are also great for helping detox the liver and gallbladder, and getting your bile flowing! Talk about supporting your bowel movements.


Isn't that so cool what these roots can do to support our bodies in healing? I love learning how powerful and amazing our food can be for us! Another reason to work towards eating more foods straight from the earth and not from factories!
