Mouth Watering Pumpkin Chili

Halloween is tomorrow and I thought I would share my most favorite Halloween/fall recipe. Trust me when I say we have this meal frequently...all year long! It's hard for anyone to believe, once they've tried it, that there's a whole lot of pumpkin in here! It is seriously so delicious and CREAMY! Not to mention, easy to throw together in a pot, Instant pot, or even Crock pot. Just be sure to give me all the credit when your family and friends start raving over this recipe!


Pumpkin Chili

1.5 lb ground beef or turkey

1 Tbls olive oil

1 small onion

8 oz diced mushrooms (optional)

2 cloves minced garlic

1-2 Tbls organic chili powder

1 Tbls oregano

1 4 oz can organic green chilies

1 28 oz can crushed tomatoes

1 4 oz can tomato sauce

2 cups water or bone broth

2 15 oz cans organic refried beans

15 oz can pure pumpkin

1 tsp salt or more to taste

1/4 tsp pepper


Garnishing's: avocado, cilantro, lime, organic tortilla chips, organic plain Greek yogurt


Directions

In a large stock pot, brown your ground beef/turkey. Once cooked add your olive oil, onion, mushroom, garlic, oregano, and chili powder. Sauté on medium high heat until the onion and garlic are fragrant, about 2-3 minutes. Add your chilies tomatoes, tomato sauce, water/bone broth, beans, pumpkin, salt and pepper. Cook on low heat for 30 minutes. Serve with your favorite chili garnishing's.


Being submerged in the nutrition world for quite a while, I have learned one thing, and that is nature is so cool! Even the cycle of how it all works just blows my mind. As the seasons change from summer to fall we start to see a change in fruits and vegetables in our stores. One of the most noticeable additions to our stores in the fall are PUMPKINS!


The fruit of a pumpkin houses high levels of vitamins C and E, which help strengthen and support our body's immune systems. In addition, pumpkin also contains high levels of Beta-carotene, which is great for our eyes, may help fight off some cancers, prevents macular degeneration, and boost neurological and heart health!


Most of our "fall" fruits and vegetables serve a purpose in supporting and improving our body's immune system. As we all know, fall and winter weather bring more sickness into our homes. Taking advantage of these seasonal fruits and vegetables during these cooler months can do our bodies a lot of good.


Try adding pumpkin into more of your soups or baked goods for a change and enjoy the subtle sweet flavor it puts off in addition to its wonderful nutritional benefits!
