One Pot Creamy Tomato Basil Pasta

This recipe is one for the books! We all can use a few recipes up our sleeves that are quick, easy, AND fast clean up! (Because we all know that cleaning up multiple dishes is the last thing we want to do each evening.) It is so simple to make and if you're looking for a gluten free, dairy free recipe, the swaps to make this possible are so simple!


This recipe calls for (of course) pasta and cream. These two can be swapped out for a gluten free pasta for my gluten free friends and coconut cream! So easy and still yummy!


Here's what I did:


One Pot Creamy Tomato Basil Pasta


12 oz pasta (I like Jovial pasta for GF)

1/2 yellow onion, minced

3 cloves garlic, minced

1 Tbls dried basil (or 1/4 cup fresh)

1/2 lemon, juiced

2-3 Tbls Extra Virgin Olive Oil

4 cups organic bone broth

8 oz fire roasted diced tomatoes

1 tsp salt

pepper

1/2 cup organic heavy cream (or coconut cream)

1/2 cup parmesan cheese, freshly grated (omit for DF)

*Not really optional, but optional* - Grilled Chicken (or any kind you prefer)


Directions

In a large pot combine pasta, onion, garlic, basil, lemon, oil, broth, tomatoes, salt, and pepper. Bring pot to a boil and reduce heat to a low boil for 14 minutes, or until pasta is tender. Turn off heat and add cream and cheese. Option to add chicken, but I almost think this is not optional! Adding protein will help your blood sugar levels not spike so drastically, and will keep you full longer...I ALWAYS add protein.


Two ingredients I want to highlight in today's recipe.


The first is basil. Do you ever think twice about the seasonings/herbs you add to your dishes? Adding herbs and spices can actually be quite beneficial to your gut and overall health. Basil is full of antioxidants and magnesium. Magnesium is a mineral that our bodies need for proper muscle contraction and relaxation. When deficient in magnesium we may find ourselves suffering from not only muscle cramping, but also heart palpations, restless leg syndrome, and inability to recover from any strenuous exercise/movements. Basil also contains antibacterial and antimicrobial properties, which have been used for medicinal purposes to help fight off illness and boost the immune system.


The second ingredient is tomato. Tomatoes are very commonly used in so many dishes, but we hardly think twice about the health benefits that come from eating them. Tomatoes are high in Vitamin C, which we all know is a vitamin that is well known for boosting our immune systems and helping them perform well. Tomatoes also contain an antioxidant called lycopene. Lycopene, especially when paired with a fat like olive oil (this makes it makes it more available), can enhance our immunity and reduce cancer risk. In the world we live in, cancer seems to be more common than not. Including foods like these is extremely impactful to our overall health!


Next time you have a dish that contains basil and/or tomatoes (that may be drizzled with oil), just think how you're doing your body a service by giving it vital nutrients to help supports its ability to fight off infections and viruses, improve your muscular system, and support it's immune system!
