I've been making this breakfast casserole on the stove for YEARS! I can't believe that it's taken me this long to realize that I could make it in the crockpot! You can bet I'll be doing this more often from here on out.
Here's what you need to make it.
Over Night Breakfast Casserole

2 lbs hash browns
1 lbs all natural or organic sausage, cooked
12 eggs, beaten
olive oil
1 tsp sea salt
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp coriander
*optional add-ins
onion
pepper
spinach
mushrooms
Directions
Oil your crockpot generously. Add your hash browns, cooked sausage, eggs, salt, garlic powder, paprika, and coriander. Stir together. Set crockpot on high heat for 3-4 hours or cook overnight on low heat for 8 hours.
Serve with your favorite garnishing's like raw cheese, organic sour cream, salsa, cilantro and avocado

Meals don't need to take a lot of time or even have a ton of ingredients. Find a few meals that are your go-to recipes that you can always rely on to feed your family and are stress free. Think of complete meals that contain protein, healthy fats, vegetables, and healthy carbs so you know you're getting a little bit of everything!
