Peaches and Cream Chia Seed Pudding

I don't know about you, but here in Utah the weather keeps teasing us and I don't like it! One day it's nice and sunny, the next we've got nothing but dark stormy rain clouds. We're dying to get our fresh fruit from local farms and enjoying beautiful sunsets. Until then, making these yummy recipes will have to satisfy my longing for warmth.


Here's a quick, easy recipe that will make you feel like you're eating dessert, when in reality, it's probably one of the healthiest dessert options out there! In fact, I have even had this yummy pudding for breakfast, it's that nutritious.


When summer does finally role around, you'll have this recipe ready to make with all of the delicious fresh peaches! If you are a fan of rice pudding or tapioca pudding I think you'll really like this! Regardless, chia seed pudding is one of my favorite "treats" to have on hand when you're craving something sweet but still trying to hit all of your nutrition goals. You can see why below.


Peaches and Cream Chia Seed Pudding


  • 2 cups unsweetened almond milk or organic cows milk

  • ½ cup organic chia seeds

  • 2 tsp vanilla extract

  • 1-2 Tbls pure maple syrup or honey

  • 1/2 tsp cinnamon

  • fresh peaches, cubed

Mix the first 5 ingredients together in a bowl and let sit for 5 minutes. After 5 minutes mix again, cover, and place the container in the refrigerator. Allow to set for 3-4 hours before serving with fresh peaches and a dash of cinnamon!


Here's why I love chia seeds! They contain high levels of soluble fiber (more easily absorbed and used), protein, manganese, calcium, potassium, antioxidants, and omega-3 fatty acids. They have been found to help reduce signs of aging in your skin, hair and nails. Omega-3's are vital in helping our bodies fight off and reduce inflammation, whether that be self inflicted (muscle, joint, or bone injuries) or from lifestyle (diet, stress, sleep, lack of movement, etc.).


Benefits of Chia Seeds

Chia seeds are great for our digestive health, especially due to it's high levels of soluble fiber. The high levels of calcium and manganese help support our bone health, especially as we age and become less active. Because of it's high levels of protein it helps reduce blood sugar levels and will keep us feeling full longer, being a great tool to have up your sleeve when trying to lose weight and reduce food cravings.
