Porcupine Meatballs with Marinara Sauce

Porcupine Meatballs are one of my families most favorite dinners to make! It takes under 10 minutes to make prep and under 30 minutes to cook. You most likely have all the ingredients already laying around in your pantry. And, this is such an easy meal to double and freeze for later.


Making nutritious dinners for your family can be so hard some days. This is the perfect dish to keep in your back pocket when you don't want to be too creative but still look like you put a lot of work and effort into dinner. The perfect "staple" dinner.


Porcupine Meatballs


2 lbs grass fed ground beef

1 1/2 cups organic basmati rice

3 eggs

1 Tbls dried oregano

1 tsp salt

1/4 cup diced onion

2 cloves garlic minced


Add all ingredients together in a medium bowl, mix together until well combined. Roll ground beef into 1-2" balls. Place in a large frying pan, coated with olive oil or avocado oil and bring to medium heat. Cover and cook for 15 minutes, turning half way through. Serve with marinara sauce.


Marinara Sauce


15 oz can organic tomato sauce

2 tsp garlic powder

1 tsp salt

1 1/2 Tbls italian seasoning


In a bowl combine all ingredients together. You can heat up the sauce in a saucepan or just serve it at room temperature.

Grass fed ground beef is the key player in this meal. Grass fed beef contains higher amounts of omega-3 fatty acids. Omega-3 fatty acids are great for improving heart health and brain health. Most people are really good at consuming enough omega-6 fatty acids but not enough omega-3's. Grass fed beef is a great source to get more into your daily diet.


Grass fed beef is more likely to not have as many hormones or antibiotics in it. This is a big deal, because if the beef we eat contains high levels of hormones or antibiotics, that means we're just fueling our bodies with that stuff as well.


Now regardless of if your beef is grass fed or not, beef alone is a great source of protein, iron, and vitamin B6 (great for brain health) and selenium (great for thyroid/hormone health). Don't not buy beef if grass fed is too expensive. You are still getting important nutrients out of any beef you buy, there's just more nutritional value in grass fed.
