Reese's Peanut Butter Cup Popcorn

My kids and I were recently wandering the isles at Costco when we stumbled across this delicious treat!

Honestly, when my kids started begging me to buy it I was super tempted. But, of course, I had to turn it over and look at the ingredients, knowing that Reese's aren't known for their clean ingredients, I was almost certain this would not be a purchase we'd end up making.

With the first ingredient being sugar (non-organic sugar is a no), second being popcorn (this is actually ok), and third being vegetable oil (super inflammatory and a BIG NO) I was already out.

You already know where this story is going...of course I decided to lift my kid's spirits by telling them that not only could we make this at home super easy, BUT we could make it better for our bodies too!

We couldn't eat this fast enough! Here's my own recipe!

Reese's Peanut Butter Cup Popcorn

Servings: 6

1/2 cup popcorn kernels

(2 Tbls extra virgin olive oil, if popping corn over the stove)

2 Tbls grass fed butter, melted

1 tsp Redmond's Real Salt

1/4 cup Enjoy Life semi-sweet mini chocolate chips, melted

1/4 cup organic peanut butter, warmed up

Pop popcorn in a large pot over the stove, or popcorn maker. If doing it over the stove, heat up oil on medium high heat for 1-2 minutes, add popping corn, cover leaving a small gap if there's no venting hole, and shake the pot continuously for 3-4 minutes, or until popping has stopped. Stir in butter and salt. Allow popcorn to cool before drizzling on the chocolate chips and peanut butter. Mix well and allow to cool for 20 minutes before eating.

By making our own version of this popcorn we're able to avoid inflammatory oils, gmo sugar that's sprayed in glyphosate, artificial flavors, and more!

Bringing food back to simple and basic ingredients is what our bodies need. Granted, this is a treat and we most certainly won't be eating this regularly, but because it's a treat, we've been able to tailor it up to be more nourishing than inflammatory, especially when compared to things we buy at the store.

Don't forget, eating more nourishing foods doesn't mean you can't eat fun foods on occasion! It's all about finding a good balance.

Happy cooking!

Love,

Danielle
