The Perfect Gluten Free Chocolate Chip Muffins

It's been a minute since I've posted a recipe on here. These muffins stole my heart the first time I had them! I couldn't believe they were gluten free! I think they can be a perfect afternoon snack, special treat, and even a great replacement for cupcakes!


I got the original recipe from Ambitious Kitchen's "Healthy Gluten Free Chocolate Chip Muffins". If you don't already, follow her recipe blog! There are so many yummy and healthy recipes on her page.


Here's my version of the recipe. It took me about 5 minutes to whip together, making it about 30 minutes from start to finish!


Perfect Gluten Free Chocolate Chip Muffins

Makes 12 muffins


Dry Ingredients

1 1/2 cups gluten free organic oat flour

1 1/2 cups packed blanched fine almond flour

1/2 tsp cinnamon

1 tsp baking soda

1/2 tsp salt

1/2 cup dairy free chocolate chips (I like Enjoy Life mini chocolate chips)


Wet Ingredients

3 eggs

2 Tbls pure organic maple syrup

2 Tbls raw organic honey

1/3 cup raw milk

3 Tbls melted coconut oil

1 1/2 tsp vanilla extract

1 Tbls apple cider vinegar


Directions

Preheat oven to 350 degrees F. Line a muffin tin with12 liners, brushing or spraying each liner with oil (a must to prevent the muffins from sticking).

Combine all dry ingredients in a bowl. Mix well.

Add wet ingredients and whisk until well combined with a smooth, creamy consistency.

Fill each muffin liner evenly (I fill mine to the brim).

Bake for 20-25 minutes or until toothpick comes out clean. Allow to cool in muffin tin for 3-5 minutes before placing on cooling rack.


These muffins are so fun to bring to parties or family gatherings, as no one will even notice they're GF and sweetened with healthy sugar substitutes!
