Valentine Mashed Potatoes

Valentines Day is always a controversial holiday. Some of us celebrate it in big, great ways, while others may only do things to make the day special for our kids. Either way, these Valentine Mashed Potatoes can be lots of fun to whip up as a side dish to go along with the rest of your dinner. If it doesn't fit your menu, try it out another evening for a fun surprise for the family! The look on my kids faces was pure excitement when they saw that I turned our mashed potatoes PINK! I think it's safe to say that these fun potatoes will be back on the menu for more than just Valentines Day.


Mashed potatoes are always a favorite side dish, especially when it comes to big family dinners. Pair it with steak, chicken, turkey, ham, gravy, rolls, green beans, a green salad, the different combinations of meals are endless!

Today's recipe is quite simple. All you need are 7 ingredients that you most likely already have!


Valentine Mashed Potatoes


8 medium sized Yukon potatoes, scrubbed, washed, and cubed (about 2" or smaller) - skins on

3 Tbls grassfed butter (or olive oil for dairy free)

1/4 cup beet juice (from a can or 1/4 cup blended beets)

3/4 cup organic milk of any kind or bone broth

1 1/2 Tbls Salt

1 Tbls Garlic Powder

Pepper to taste


Directions

Place all of your potatoes in a large pot, fill with water until potatoes are covered. Cover with a lid and turn the heat on high and bring to a boil. Reduce heat to medium, as to not let potatoes boil over. Boil potatoes until soft (about 30 minutes).

Once soft, using the lid, drain liquid from potatoes. Add butter, beet juice, milk, salt, garlic and pepper. Mash until they reach desired consistency. We like ours a little chunky! If your potatoes are a little dry, add 1/4 cup more of milk or bone broth.


**Pro tip**

Whip your potatoes in a KitchenAid mixer makes for the fluffiest mashed potatoes you'll ever have! And it's quick and easy!


Serve with your favorite gravy or with a dollop of butter!


I love this recipe because it's super easy to adjust for those of us who have dairy allergies or sensitivities. By simply swapping out the butter for olive oil and milk for a dairy free milk or better yet, bone broth, you still get amazing tasting mashed potatoes.
