Wild Berry Oat Sheet Pan Pancakes



I have almost always bulk prepped my pancakes. It just makes it easier for the kids to get their breakfast in the morning (they're little) and I know they are getting something that's full of nutrients! It wasn't until about 3 weeks ago that I discovered sheet pan pancakes! Seriously??? Where has this been my whole life! Since I bulk prep my pancakes I'm usually at the stove for almost an hour, cooking away, but this new method is life changing! From Start to finish, this nutritionally dense breakfast can be made in bulk in under 30 minutes! The best part of this dish is, it is gluten free for those of us who have gluten sensitivities, sugar free to help reduce that insulin spike and our blood sugar levels, high in protein and fat to help you stay full longer, contains high levels of antioxidants and fiber to help keep the digestive tract working properly, and greens to support your body's natural detoxing pathways. You can't get much better than this!


Wild Berry Oat Sheet Pan Pancakes


2 cup organic oats (ground into oat flour)

1/2 tsp salt

2 1/2 tsp baking powder

1 tsp cinnamon

1 tsp vanilla

3 eggs

1 cup milk

1/2 cup berries

2 handfuls of greens (spinach, kale, swiss chard)

*optional add ins: hemp hearts, chia seeds, nut butter, protein powder


Preheat oven to 400 degrees. Combine all dry ingredients together in a large bowl and set aside. In a blender, combine vanilla, eggs, milk, berries (leaving a few out for toppings), and green. Once blended, combine liquid mixture into dry ingredients bowl. Stir until well combined. Using a cookie sheet, line it with parchment paper and pour mixture onto pan, spreading it out evenly. Bake in the oven for 20-25 minutes (check with a toothpick).


I love this recipe! I can easily triple the batch and have plenty of leftovers for my kids to eat for breakfast throughout the week without it taking me 30 more minutes to make. It's important to me that my kids are getting more than sugar and empty carbs for breakfast. Blueberries are one of my favorite fruits to add to this recipe. Blueberries are high in antioxidants and low in sugar. Blueberries support brain health and, one you probably haven't hear of, bladder health. Believe it or not, the brain and bladder are closely related and supporting them both with nutrient dense foods is so important for our overall health!
